Golden pan-seared salmon with garlic, lemon and fresh parsley.

Servings: 2 · Prep: 10 minutes · Cook: 12 minutes

  • 2 salmon fillets (180–200 g each)
  • 25 g unsalted butter
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • Juice of half a lemon
  • 2 tbsp chopped parsley
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Pat salmon dry with paper towels and season with salt and pepper.
  2. Heat olive oil in a pan over medium-high heat; place salmon skin-side down if skin-on.
  3. Sear for approximately 4–5 minutes, turn carefully and continue cooking according to thickness.
  4. Reduce heat, add butter and garlic and spoon butter over the fillets.
  5. Add lemon juice and parsley. Cook until the thickest part reaches 63°C (145°F), then serve.

Cooking tip

A thermometer is more reliable than judging doneness by color.
